Potato Soup

5 baking potatoes, peeled, cut up, and boiled until tender
1 pkg real bacon pieces
1/4 cup chopped onion
1 pkg shredded cheese
milk ( I don't measure)
heavy cream (again, I don't measure, but the smallest would work fine)
1/3 cup flour
1 stick butter
salt/pepper

When the potatoes are almost done cooking, in a separate pan melt the butter and add flour to it, making a roux. When the flour and butter are incorporated together, add heavy cream (enough to make it still liquid--the flour will thicken things up, but you don't want it too thick.) After the potatoes are done, drain them and return the pot to the stove. Salt and pepper at this point. Add the chopped onions , 1/2 of the cheese, and 1/2 the pkg of bacon pieces--stir gently. I pour the heavy cream mixture over the potatoes, and then add milk on top of that to the desired consistency. Then turn your heat on low or turn your crock pot on low and let simmer for a while, stirring occasionally if not in the crock pot. Add more salt and pepper as desired. When finished, garnish with the left over bacon pieces and the shredded cheese.

Praise/Prayer Requests

Hi guys-sorry for the long break in between posts--life has just been catching up with me lately. Here are this weeks praise/prayer requests. The snack list is toward the bottom of the blog--it runs through March.

1. Dugger: Todd has been in Hawaii this week; Karla's cousin Claudia is at home and walking around like nothing happened.

2. Harris: baby boy due soon--pray for safe delivery and post partum.

3. Rimmer: Garrett baptized last Sunday, Maddie the week before him; pray for Natalie--questions about salvation.

4. Foltz: prayer for guidance as to what they are supposed to be doing. Also, I just received this email from Mandi: my Dad, Dale Harper, went to the hospital Tuesday. The doctor wants to keep Dad on bed rest this week--and keeping him for a number of days.Last night he was in pain and repeatedly emptying his stomach all night. This morning, after calling the clinic, Mom took him to the emergency room. There seems to be a blockage in the intestines again and agravated by this weeks chemo--Dad body wasn't reacting well. Hope that changes over the next few days of rest and help his body regain some normality. Prayer for Mom also. When she is busy and stressed, she doesn't want to eat and that is not good for her blood sugar.

UPDATE from Mandi: My Dad had a rough night Tuesday and was moved to the ICU. Yesterday, Thursday, they were more normal functions. Drs added more fluids and nurturance by a tube. My Dad is regaining his strength and able to get out of bed w/ help.

5. Dunlap: prayer for Shon's family--his great aunt passed away late last week.

I will be posting the recipe for potato soup in the next post. Also, our class won sweet rolls for the I love my church Sunday--we will be having those March 8th. Have a great week!
